New Year’s Day brunch for 8: menu, shopping and timing

Prepare brunch for 8 on 1 January 2027 with frittata, pancakes and fruit. Use one shopping list and a morning cooking schedule.

40 items, grouped like in the Cartdock app.

The checklist

  • Large eggs · 18 eggs
  • Ricotta · 200 g
  • Milk · 600 ml

+ 37 more explained items

Start 1 January 2027 with a late breakfast that lets the host sit down too. This plan serves 8 people at 11:00 with baked ricotta, tomato and spinach frittata, American pancakes and a simple orange-and-banana platter. The savoury dish uses the oven while the sweet course uses the hob. One helper takes care of drinks and fruit, leaving the cook with a clear sequence rather than several competing dishes.

The recipe quantities come from doubling 2 published recipes that each serve 4. The fruit platter and drink quantities are editorial choices for this gathering. They are included in the same shopping list, with milk and eggs consolidated across uses. Metric weights stay metric; the recipe spoons remain measuring spoons. Self-raising flour means flour with a raising agent already added, followed by the additional baking powder listed here. Do not silently swap it for ordinary flour.

On 31 December, measure dry ingredients and prepare the table before the evening celebration. On New Year’s morning, give yourself a full preparation window and let pancakes arrive in rounds. The 11:00 serving time is a hosting suggestion, not a guarantee for every cooker. If your oven cannot hold both tins or your hob only fits one pan, change the schedule before inviting guests to the table.

Who this list is for

A household hosting 8 relatives or friends for a relaxed New Year’s Day brunch on 1 January 2027. The plan assumes an oven that fits both baking tins, a hob with space for both frying pans and a helper for drinks.

Tips

  1. Give savoury and sweet dishes separate jobs

Prepare the frittata tins before mixing, then set out the pancake ingredients and serving plates. Keep fruit as its own serving dish. Agree who will watch the oven and who will cook pancakes, so the hot food can reach the table in manageable rounds.

  2. Double ingredients, preserve the baking depth

Both selected recipes state 4 servings; this menu doubles each ingredient list for 8 guests. Make the frittata in 2 original-sized tins rather than one deep dish. Check oven fit before shopping and allow extra time if shelves cook unevenly. The pancake source gives servings, not a fixed pancake count, so share the complete batch between guests instead of promising an exact stack per person.

  3. Let the sweet course arrive in rounds

Even with 2 pans, the pancake course needs attention at the hob. Ask a helper to handle drinks and fruit while the cook finishes each round. Guests can start with frittata and continue with freshly cooked pancakes. If everyone must eat pancakes simultaneously, move brunch later and plan a separate holding arrangement after the egg bake; the timetable here assumes immediate service, avoiding competition for oven space.

  4. Use temperature, not colour alone, for eggs

A golden top does not prove that an egg bake is cooked through. Check the middle of both tins with a clean food thermometer: official guidance gives 71°C for frittata and 74°C for reheated leftovers. Keep raw egg mixtures away from prepared fruit and wash hands and utensils after contact. Serve egg dishes promptly; the FDA limits room-temperature exposure to 2 hours, or 1 hour above 90°F.

  5. Give leftovers a planned home

A relaxed brunch should not become an all-day buffet. Keep fridge space clear and set out shallow containers before cooking. The Food Standards Agency recommends a fridge at 0–5°C, quick cooling and refrigeration within 2 hours, then using leftovers within 48 hours or freezing them. Follow shorter pack instructions when relevant. Label the cooking date, and cool portions before storage rather than leaving a large warm tin on the table.

  6. Keep shopping and hosting decisions separate

The shopping list combines eggs, milk, butter and oils once each, with their destinations explained. Fruit, syrup, frying reserves and drinks use explicit editorial allowances because the sources leave some of these open. Check the pantry before buying and delegate the drink station to someone who can stay out of the cooking area. Plain water and unsweetened hot drinks keep the morning flexible without needing a separate cocktail service.

To do

By 31 December 2026Prepare before the celebration

  • Confirm guests, allergies and serving time — Plan 8 guests for 11:00 on 1 January 2027; check egg, milk and wheat suitability.
  • Set the table and measure the dry ingredients — On 31 December, set out plates and combine 400 g flour, 3 tsp baking powder, 2 tbsp golden caster sugar and 2 pinches salt in a covered bowl.
  • Reserve fridge space and check chilled ingredients — Keep dairy and eggs chilled; check use-by labels and a fridge reading of 0–5°C. Do not rely on party leftovers of uncertain storage.

1 January 2027, from 10:00Cook, serve and store

  • 10:00 — preheat and grease the tins — Heat to 200°C conventional or 180°C fan. Grease both tins with the reserved 1 tbsp olive oil; slice 2 onions and wash the vegetables.
  • 10:05 — soften the frittata vegetables — Divide 2 tbsp olive oil and the onions between the pans. Cook 5–6 minutes, add 600 g tomatoes for 1 minute, then remove from heat and fold in 200 g spinach and 2 small handfuls basil.
  • 10:15 — assemble and bake 8 frittata portions — Divide vegetables and 200 g ricotta between the tins. Beat 12 eggs and season to taste; divide over fillings. Bake 20–25 minutes until set and each centre reaches 71°C. Continue cooking if needed.
  • 10:20 — mix pancake batter for 8 portions — Add 6 eggs, 50 g melted butter and 400 ml milk to the dry mixture. Whisk only until combined, then transfer to the pouring jug. Wash egg-contact surfaces and the pans.
  • 10:25–11:00 — fry pancakes in batches — Use medium heat and small amounts from 20 g butter and 30 ml vegetable oil. Pour separate rounds about 8 cm across; cook 1–2 minutes until bubbles appear, turn, then cook about 1 minute more until cooked through. Use all batter; serve batches promptly.
  • 10:45 — arrange the fruit platter — Peel 8 oranges into segments and slice 4 bananas. Divide across a platter for 8 portions; keep the 160 ml syrup separate for pancakes.
  • 10:50 — prepare drinks and portion the frittatas — Brew 1 l coffee with the 60 g coffee and 1 l tea with 4 bags according to equipment and pack instructions. Set out 200 ml milk and 2 l drinking water. Cut each fully cooked frittata into 4 portions.
  • 11:00 — serve a small first round — Give each guest a frittata portion and fruit; pass pancakes as they leave the pans. Put milk out only for serving and return it promptly to the fridge.
  • After brunch — cool and label leftovers — Divide cooked leftovers into shallow containers and refrigerate within 2 hours of cooking. Use within 48 hours or freeze promptly; reheat egg leftovers to 74°C. Discard egg dishes left out beyond the safe serving limit.

Questions and answers

Can I prepare the menu the night before?

Measure the dry pancake mixture, check equipment and set the table. Leave egg mixing and baking for the morning in this timetable. You can wash vegetables ahead if they are dried, covered and chilled appropriately. Do not treat a bowl of raw egg mixture left on a kitchen counter as useful advance preparation.

What if I only have one suitable baking tin?

Borrow a second tin before shopping or bake the frittatas consecutively and move the serving time. Do not pour the doubled filling into one source-sized tin and expect the same cooking time. The plan depends on 2 shallow bakes; the centre temperature determines readiness, and a deeper mixture changes the cooking task.

Is this a vegetarian or allergy-free brunch?

The menu contains no meat, but choose ricotta suitable for your guests’ vegetarian requirements. It contains eggs, milk and wheat. Read ingredient and allergen labels and discuss substitutions with guests before shopping. This checklist does not validate a gluten-free, dairy-free or vegan replacement; changing flour or eggs can alter how the recipes cook.

Can I serve the frittata cold later?

Only if it was fully cooked, cooled promptly and refrigerated within 2 hours of cooking. Keep it chilled until serving and use it within 48 hours under this plan. If its time outside refrigeration is unknown, discard it. Reheating is an option for safely stored portions, with the centre reaching 74°C.
