A Christmas meal becomes easier when the oven has a clear job at each stage. This menu serves 6: glazed turkey crown, roast potatoes, plain peas, prepared gravy and apple crumble. It is deliberately a British-style roast dinner. The German and Polish versions preserve that scenario; a Polish Christmas Eve Wigilia needs its own menu and traditions. Set the table and decide who will carve before cooking begins.
The turkey keeps the selected recipe’s original quantities and its stated yield of 4–6. Potatoes are increased from 4 portions by multiplying every measured ingredient by 1.5. Dessert uses 2 separate original batches, each serving 4, giving 8 portions and some spare pudding. Keep their dish sizes unchanged. The shopping list combines butter and flour across dishes without converting spoon measures into invented gram weights. Peas and ready-made gravy are practical additions chosen for the hob, with quantities set for this menu.
Bake the crumble in the morning and serve it chilled after proper cooling and refrigeration. Roast the turkey next, then use the oven for potatoes while the cooked crown rests. This removes competing oven temperatures from the final stretch. Times are planning estimates; the turkey temperature, potato texture and package instructions decide readiness. The combined menu, scaling and oven sequence have not been kitchen-tested by Cartdock. Reuse equipment you own, check oven capacity and share the preparation jobs before the day.
Who this list is for
A household hosting 6 people for a British-style Christmas meal, with a domestic oven, hob, kitchen scale and food thermometer. The menu includes meat, wheat, milk and mustard. It uses a fresh or fully thawed turkey crown and allows modest meat portions alongside generous sides. Check guest appetites and dietary needs before shopping; this is a small roast dinner rather than a buffet.
Tips
Plan the oven before the shopping
Check that the turkey crown, potato tray and crumble dishes fit the oven in their planned stages. Bake dessert first and refrigerate it after safe cooling. Roast the turkey next, then cook potatoes while the crown rests. Set aside serving dishes before the final cooking stretch begins.
Scale sides without changing the dessert pan
The potatoes use 1.5 times the source quantities. The crumble uses 2 complete original batches in separate dishes, retaining the original depth instead of putting a larger mixture into an arbitrary pan. Optional oats, demerara sugar and cream are omitted. This makes shopping simpler and leaves fewer open ingredients. The quantities are a menu decision; they do not promise identical results with every potato variety, apple or oven.
Give each oven stage enough room
Check the cold roasting tins against the oven shelves before buying the crown. Potatoes need a single layer, so use more than one tin if necessary. The morning dessert stage keeps sweet food clear of raw poultry preparation. After the turkey passes its safety check, increase the oven setting for the potatoes. Allow the serving time to move if the meat needs longer; a timetable should leave room for cooking rather than force early carving.
Use a thermometer for the crown
A dark honey glaze can appear ready before the meat underneath is cooked. Probe the thickest breast meat in several places, avoiding bone, and use the Food Standards Agency combination of 75°C for 30 seconds. Clean the probe after each use. If a reading is too low, continue cooking and test again. The recipe time is a starting estimate, not permission to serve undercooked poultry.
Protect ready-to-eat food during preparation
Store the crown covered on the lowest refrigerator shelf in a tray that catches drips. Do not wash raw turkey. Prepare apples and other ready-to-eat components before handling poultry, or clean the work area thoroughly between jobs. Keep carving equipment separate from raw-meat equipment. Wash hands and clean surfaces after contact with raw meat, and check that the turkey use-by date covers your cooking day.
Confirm the menu with guests before shopping
Butter puts milk in the turkey and dessert; flour puts wheat in the potatoes and crumble; the glaze contains mustard. Check prepared gravy and spice labels for their actual ingredients. A vegetarian guest needs a separate main and suitable gravy rather than simply a plate without turkey. Choose any substitution before consolidating the list, because removing an ingredient or changing a recipe can affect both flavour and the preparation sequence.
Reserve containers as well as serving dishes
Make refrigerator space for cooked leftovers before starting. Portion food into shallow containers so it can cool promptly, and refrigerate within 2 hours. Use refrigerated leftovers within 48 hours or freeze them. Reheat only the amount you will eat, only once, until steaming hot throughout. Label the contents and cooking date; a container of turkey, a dessert and gravy should each have an obvious plan.

Take along
Bring existing kitchen equipment to the counter
- Roasting tin for the crown — Check the crown fits and the tin clears the oven walls.
- Potato roasting tins and colander — Enough tin space for a single layer; drain and roughen potatoes.
- Round baking dishes — 2 × 23 cm, each at least 5 cm deep; bake original crumble batches separately.
- Kitchen scale and measuring spoons — Use grams and marked tsp/tbsp measures rather than cutlery.
- Mixing bowls, spatula and pastry brush — Separate the glaze from dessert mixing equipment.
- Saucepans and serving spoon — A large pan for potatoes and separate pans for peas and gravy.
- Food thermometer and timer — Probe the thickest meat and measure the safety hold time.
- Oven gloves, foil, carving board and knife — Handle hot tins safely; cover the cooked crown loosely while resting.
- Shallow storage containers and labels — Prepare refrigerator space for dessert and leftovers; check it is 0–5°C.
To do
Before and on Christmas DayPrepare, cook and store in sequence
- Check supplies, guests and the crown label — Confirm dietary needs, use-by date, refrigerator space and package cooking guidance; thaw in the refrigerator if needed.
- Prepare the first crumble — Mix 575 g prepared apples with 2 tbsp sugar in a baking dish; combine 175 g flour, 110 g sugar and a pinch of salt, then rub in 110 g cold butter and spread over fruit.
- Bake and repeat the dessert batch — Bake at 190°C conventional or 170°C fan for 35–40 minutes, until apples are soft and topping golden; cool for 10 minutes, then repeat with the remaining dessert ingredients.
- Cool and refrigerate the crumble — Cool each dish promptly and refrigerate within 2 hours; serve chilled, without adding a reheating stage.
- Start the crown with a time buffer — Begin about 3 hours before serving. Heat to 190°C conventional or 170°C fan; coat the crown with 50 g butter, salt and half the five-spice, place skin up and roast for 30 minutes.
- Make and apply the glaze — Mix honey, mustard, vinegar and the remaining spice. Brush half onto the crown, roast for another 60 minutes and apply the remainder in two further brushings.
- Prepare potatoes near the end of turkey cooking — Peel and cut into roughly 5 cm pieces, cover with water, add salt, bring to a boil and simmer for 2 minutes; drain, shake the colander and let steam escape for 15 minutes.
- Verify that the turkey is fully cooked — Check several thick breast points away from bone: 75°C for 30 seconds. Continue cooking if needed, clean the probe after use and shift the remaining timetable.
- Rest the cooked crown and switch oven settings — Transfer to a clean board, cover loosely and rest for at least 20 minutes. Heat the potato tins at 200°C conventional or 180°C fan.
- Coat and roast potatoes after the turkey leaves — Toss with 3 tsp flour. Heat 150 ml oil in the hot tins; carefully add potatoes, coat and spread in a single layer. Roast for 15 minutes, turn, roast 15 minutes, turn, then allow another 10–20 minutes until crisp.
- Finish peas on the hob — Prepare the 600 g frozen peas according to their packet and serve hot, without an additional butter recipe.
- Heat the prepared gravy — Pour 600 ml into a separate saucepan and heat according to its label, stirring; serve hot in a jug without making a new gravy recipe.
- Carve and serve together — Use the clean board and knife; portion the crown among guests and serve with potatoes, peas and gravy. Serve chilled crumble afterwards.
- Cool and label uneaten food — Divide leftovers into shallow portions; refrigerate within 2 hours and use within 48 hours or freeze. Reheat only once until steaming hot throughout.
Questions and answers
Is this a full traditional Christmas spread?
It is a complete small British-style meal with a main, starchy side, green vegetable, gravy and dessert. Stuffing, sausages wrapped in bacon, bread sauce and extra vegetables are deliberately outside this menu. Adding them changes oven space, allergens and shopping totals. The crown is chosen for the selected recipe’s smaller yield; the comparison whole turkey serves a larger group and brings a longer preparation schedule.
Can I use this list for 8 guests?
Replan the main first: the selected crown serves 4–6, so its meat quantity is not an 8-person recommendation. Scale side ingredients from their stated original yields, and plan separate tins and refrigerator space. Dessert already gives 8 portions from 2 original batches. Do not multiply cooking time by the guest count. A larger crown needs its own packaging instructions and temperature checks, and the oven sequence needs another capacity check.
What if my turkey crown is frozen?
Read its defrosting instructions before choosing the cooking day. Defrost in the refrigerator in a covered drip-catching container and ensure the centre is fully thawed. The Food Standards Agency specifically directs crown owners to the packaging; a whole-bird thawing schedule is not automatically suitable. This menu assumes fresh or fully thawed meat, and gives no guaranteed overnight thawing time. Use fully defrosted food within 24 hours and follow the label.
How should I reuse turkey and gravy?
Cool and refrigerate them promptly in separate manageable portions. The plan here follows the Food Standards Agency: refrigerate within 2 hours, eat within 48 hours or freeze, and reheat only once until steaming hot throughout. A next-day sandwich can use properly cooked and chilled turkey cold. For a hot meal, take out only the portion needed and heat its centre thoroughly; avoid repeatedly warming the whole storage container.
