A manageable US Thanksgiving dinner for 8 people
Prepare Thanksgiving dinner for 8 with turkey, mash, green beans and pumpkin pie. Plan the oven, serving order and leftover storage.
The checklist
- Butterball whole turkey, fresh or fully thawed · 12–16 lb
- Unsalted butter · 1 US cup + 4 US tbsp
- Russet potatoes · 4 lb
+ 39 more explained items
This menu is for US Thanksgiving on 2026-11-26. It gives 8 guests a roast main, a generous potato side, green vegetables, sauces and dessert without competing oven dishes. The German and Polish versions keep the same American meal. Canadian Thanksgiving has a different date, and family traditions vary; use the calendar note below before sending invitations. Ask guests about dietary needs and decide who will carve, finish the vegetables and clear space for leftovers.
The turkey recipe serves 8 and specifies a 12–16 lb fresh or thawed bird with brown butter, thyme and an onion bed. Double the mashed-potato batch from 4 to 8, leaving out optional garlic. Keep the pie’s yield of 8 slices and its dish size. Heat frozen green beans and prepared sauces according to their labels.
Bake the pie the day before, cool it promptly and refrigerate it. On the holiday, the turkey has the oven to itself while the sides use the hob. Keep dessert chilled until serving. The list combines shared ingredients and preserves literal US measures rather than inventing metric conversions. Set out marked measuring tools, check the roasting pan fits and reserve clean equipment for cooked food. A serving-time buffer is more useful than a crowded menu: if the thermometer says the turkey needs longer, move dinner and finish the sides later.
Who this list is for
A home cook hosting 8 people for an American Thanksgiving meal with one conventional oven and a hob. The menu includes turkey, mashed potatoes, green beans, prepared gravy, cranberry sauce and pumpkin pie. It contains milk, eggs and wheat; check prepared products for additional allergens. This is a seated meal with planned leftovers, not an unlimited buffet. Confirm guest needs before using the shopping totals.
Tips
Give the turkey its own oven plan
Prepare the roasting pan and check that the bird fits before the holiday. Keep the turkey's ingredient amounts and cooking method together. Plan the potato and vegetable jobs around the oven stage, and use the temperature checks in the cooking steps before carving.
Prepare sides and dessert around the main dish
Bake the pumpkin pie ahead, cool it promptly and refrigerate it. Prepare the potatoes and green beans on the hob while the turkey has the oven. Check prepared cranberry sauce and gravy labels for allergens, storage and heating instructions before choosing serving dishes.
Make oven space a deliberate choice
Bake the pie the previous day. Check that a foil-lined rimmed baking sheet and the whole bird fit on the oven’s lower-third rack, as the selected turkey recipe requires. Leave safe lifting space. Assign pans for mash, packet-cooked beans and prepared gravy before starting, so the hob has a clear sequence.
Measure the meat before planning the rest
Use an oven setting of 325°F. Check for 170°F in the thickest thigh away from bone, and at least 165°F in the thickest breast and inner wing. Clean the probe between checks. Continue cooking if any target is not reached, then rest for 20 minutes before carving.
Keep preparation jobs separate
Do not wash raw turkey. Keep its tray low in the refrigerator and use separate boards and utensils for raw poultry and ready-to-eat food. Prepare dessert before handling the bird, then clear and clean the work area. Premeasure butter and seasoning so contaminated hands never reach into shared containers. Check the turkey label for added salt and follow its handling instructions; taste sauces before adding further seasoning.
Use the right holiday calendar
The US federal calendar lists Thanksgiving on 2026-11-26, while the Canadian calendar lists it on 2026-10-12. This guide deliberately keeps the American November scenario in every language. Tell guests the actual meal date and arrival time, rather than assuming the name of the holiday is enough. Arrange contributions before shopping and update the consolidated list if someone brings a side; overlapping dishes use refrigerator space as well as oven space.
Plan storage before anyone sits down
Set out shallow containers and clear a refrigerator shelf before the meal. Refrigerate cooked food within 2 hours, or 1 hour above 90°F, at 40°F or colder. Cut leftover turkey into smaller pieces. Use turkey within 3–4 days or freeze it; reheat leftovers to 165°F. Label individual portions so tomorrow’s meal needs only a small container. Follow sauce labels and keep the custard pie refrigerated between servings.

Take along
Existing equipment to set out
- Foil-lined rimmed baking sheet — The selected recipe uses a rimmed sheet and onion bed, not a roasting rack; check fit.
- US measuring cups and spoons — Use marked US tools; do not substitute an ordinary drinking glass.
- Food thermometer and timer — Check multiple meat sites; the timer schedules checks rather than proving doneness.
- Pie pan, rimmed sheet and cooling rack — Support the pie shell on a sheet and cool on a rack.
- Bowl, whisk and kitchen scale — Mix filling and weigh beans; keep dessert tools away from raw poultry.
- Saucepans, colander and potato masher — Assign pans to potatoes, beans, milk and gravy; mash without a blender.
- Foil, oven gloves and separate boards — Reserve a clean board and carving knife for cooked turkey.
- Shallow containers and labels — Clear refrigerator space for chilled pie and portioned leftovers.
To do
Prepare, cook and store in order
- Check guests, labels and refrigerator space — Confirm dietary needs, sauces and turkey instructions; reserve ingredients and clean equipment for each dish.
- Thaw in the refrigerator ahead of cooking — Allow about 24 hours per 4–5 lb in a drip-catching tray; check full thawing. A thawed bird may remain refrigerated 1–2 days; never thaw on the counter.
- Mix the pie filling the day before — Whisk pumpkin, condensed milk, eggs, cinnamon, ginger, nutmeg and 1/2 US tsp salt until evenly combined; pour into the unbaked shell on its sheet.
- Bake and chill the pie — Bake at 425°F for 15 minutes, then 350°F for 35–40 minutes. The selected source tests a knife inserted 1 inch from the crust: it should come out clean. Also verify at least 160°F in the filling under FDA guidance. Cool on a rack and refrigerate within 2 hours.
- Brown and season the turkey butter — Melt 1 US cup butter over medium heat for 8–10 minutes until medium brown. Transfer to a bowl and stir in 2 US tbsp thyme, 1 US tbsp kosher salt and 1 US tsp pepper; reserve it for brushing.
- Prepare the turkey on the holiday — Put the rack in the lower third and heat to 325°F. Remove packaging, neck and gizzards; do not wash the bird. Pat dry. Arrange 3 halved shallots and 2 quartered yellow and 2 quartered red onions on the prepared sheet; place the turkey on them and brush with the butter mixture.
- Roast the turkey and baste hourly — The published range is 3 hours to 3 hours 15 minutes, brushing with the reserved butter every hour. Do not add stock or stuffing. Allow a serving-time buffer and continue if the thermometer targets have not been reached.
- Check every required meat site — Verify 170°F in the thickest thigh, away from bone, as Butterball directs; also check 165°F in the thickest breast and inner wing under CDC guidance. Clean the probe between checks.
- Rest the cooked bird — Transfer to a clean carving board, tent loosely and rest for at least 20 minutes. Finish hob dishes during this pause; keep raw-poultry tools out of the serving area.
- Boil and mash the potatoes — Peel and cut 4 lb potatoes; simmer in salted water until fork-tender, about 15–20 minutes. Drain well. Warm 2 US cups milk with 4 US tbsp butter; mash in gradually, stopping at the desired texture. Season to taste.
- Cook beans and heat gravy — Cook 800 g frozen beans exactly as their packet directs, without an invented boiling time or added butter. Heat 600 ml prepared gravy in a separate pan according to its label. Serve promptly.
- Carve and serve the meal — Carve turkey for 8 with a clean knife. Serve mash, beans, hot gravy and 400 g cranberry sauce; serve the chilled pie afterwards in 8 slices.
- Portion, refrigerate and label leftovers — Refrigerate in shallow containers within 2 hours, or 1 hour above 90°F, at 40°F or below. Use turkey within 3–4 days or freeze; reheat leftovers to 165°F. Keep pie refrigerated and follow sauce labels.
Questions and answers
How far ahead should I thaw the turkey?
Allow about 24 hours per 4–5 lb in the refrigerator, in its wrapper inside a drip-catching container. Check the centre before cooking; this is an estimate, not a guaranteed thawing appointment. A refrigerator-thawed bird can stay there 1–2 days after thawing. Never thaw on the counter. Cold-water thawing requires a leakproof bag, fresh cold water every 30 minutes and cooking immediately afterwards.
Does the menu include stuffing or homemade gravy?
No stuffing is included in the turkey or on the shopping list. Prepared pouring gravy and cranberry sauce are deliberate shortcuts. Follow their product instructions, and choose another main if a guest cannot eat poultry. Adding stuffing creates a separate recipe, ingredient total and cooking job; cooking it outside the bird is safer, and its centre must still reach 165°F. Do not treat an added dish as already covered by this plan.
Can I change the number of guests?
For a smaller group, expect more leftover meat rather than dividing the whole bird mechanically. For a larger group, replan turkey size and refrigerator space first. Scale the potato ingredients from the stated 4-person source; make additional pies as complete batches in matching dishes. A heavier turkey needs its own timing allowance and temperature checks. Multiplying guests does not multiply oven temperature or guarantee the same cooking duration.
How can I finish the meal without rushing?
Have the chilled pie, cranberry sauce, serving dishes and storage containers ready before the turkey enters the oven. Prepare potato and bean ingredients while it cooks, then finish them near the end. The checklist includes every recipe ingredient and assigns the shared butter. Keep a small written task list beside the cooker, ask one helper to handle the table, and accept a later meal if the meat is not ready.
