Recipe notes: brown rice, salsa chicken, freezer meal prep
A workweek plan needs a freezer as well as lunch containers. This recipe makes eight portions in two separate four-portion batches: five are assigned to Monday through Friday, and three are spare frozen meals. It does not promise five full-size lunches from a four-serving recipe. If you need only four meals, halve every shopping quantity and cook one batch.
Cook each batch with the original pan load rather than putting twice as much chicken into the same saucepan and assuming the same cooking time. Chicken thickness affects cooking; use a food thermometer as well as the timer. The rice package determines its water ratio and cooking time. The example quantities below suit the brown rice used in the source, not every rice product.
Cool the cooked rice quickly in shallow portions, ideally within one hour, then refrigerate or freeze. Keep at most the first lunch in the refrigerator, and only if it will be eaten within 24 hours of cooking. Freeze the other portions promptly. Move each frozen lunch to the refrigerator to thaw before it is needed, use within 24 hours of complete thawing and reheat once until steaming hot throughout. Keep the sour cream and sliced spring onion separate and add them after reheating. A work bag also needs reliable cold storage on the journey.
Who this list is for
For one person planning 5 lunches, with 3 additional freezer portions. Cook two separate batches of 4 using the original quantities per batch. Each batch takes about an hour; allow extra time to cool and pack safely. Contains milk in the sour cream.
Tips
The yield is eight
Two unchanged four-serving batches provide five lunches and three spares. The shopping list includes all eight portions, so check freezer space before buying.
Keep each pan load unchanged
Repeat the original batch instead of doubling the saucepan contents. The listed time is a guide for each batch; chicken must pass the temperature check.
Treat rice separately
Rice needs rapid cooling and at most 24 hours in the refrigerator. The freezer plan is part of this recipe, not an optional five-day fridge alternative.
Keep a cold chain
Use ice packs for transport and put lunch in the work refrigerator on arrival. A warm commute cannot be fixed simply by reheating later.
Buy mild chili powder
The US blend contains other spices and is not the same as a jar of pure hot chilli powder. Read the label before using the measured spoonful.

To do
Cook and serve
- Plan space and labels — Make freezer space for at least 7 portions. Label Monday–Friday and 3 spares. Set aside half of every ingredient for the second batch.
- Cook the first batch of rice — Heat oven to 220°C (425°F). Cook 1 US cup brown rice with 1/2 US tsp salt, using the packet water ratio; the source uses 1 3/4 cups water and 35 minutes.
- Simmer the chicken — Put 1.3 lb (approximately 590 g) chicken, 16 oz (approximately 454 g) salsa, 1/2 US cup broth and 1 US tsp chili powder in a saucepan. Bring to a boil covered, reduce heat and simmer gently about 30 minutes.
- Roast the peppers — Slice 3 peppers into 1.3 cm strips. Toss with 1 US tbsp oil and a pinch of salt. Roast 20–25 minutes, turning once, until browned at the edges.
- Check and shred the chicken — Check at least 74°C (165°F) in the thickest part. If not ready, continue cooking and check again. Shred with clean forks and mix back into the salsa.
- Pack and cool the first four portions — Divide rice, chicken, sauce and peppers equally among 4 shallow containers. Cool rice quickly, ideally within 1 hour; refrigerate the first lunch only if eating within 24 hours, otherwise freeze. Freeze the others promptly.
- Cook the second batch — Repeat the rice, chicken and pepper steps with all reserved half-quantities, using the same pan loads and doneness checks. Divide into 4 shallow containers and cool quickly, then freeze.
- Keep the toppings separate — Chill sliced spring onions and sour cream separately, following pack use-by and opening instructions. Use 1 US tbsp sour cream and 1/2 spring onion per lunch.
- Thaw the next lunch in the refrigerator — For Tuesday–Friday, move a labelled frozen meal to the refrigerator in time to thaw fully. Eat within 24 hours of complete thawing; never thaw on the desk.
- Carry cold and reheat once — Keep the meal cold in transit and at work. Reheat once to at least 74°C (165°F), steaming throughout; stir during microwaving. Add cold toppings afterward. Leave the 3 spare meals frozen for another week.
Questions and answers
Can I keep all five lunches in the fridge?
No. This plan follows the stricter rice guidance: cool quickly, refrigerate for no more than 24 hours, or freeze promptly. Later weekday meals come from the freezer.
What if I do not want three spare meals?
Halve all quantities to make one four-portion batch, then plan a different fifth lunch. Do not divide four portions into five and claim the same serving size.
Does more chicken mean a longer fixed time?
There is no reliable fixed multiplier. Cook two separate source-sized batches and check the thickest pieces reach 74°C. Continue cooking if necessary; do not rely on colour alone.
